For us it was a comfort level thing, as I’m sure it is for many. We created ours physical when first implimenting esx, but now that we’re all pretty comfortable with it we’d like to go virtual.

We were running ESX 3.5 Virtual Center as a physical box. With the upgrade to vSphere, we decided to go virtual. Then the host that was currently running the vCenter server became unresponsive and NONE of the other VM’s vMotioned to other Hosts. I am currently building a physical box and moving it out of the environment. I would highly recommend testing your failover capaiblity of the host that is running the vCenter server fails.
